60% Roussanne, 30% Vermentino, 10% Viognier, from 10 year-old vines grown on alluvial soils on the banks of the Vernazobre river, which flows through the heart of Saint-Chinian. Fermented and aged for 4 months on the lees in stainless steel vats. Bright, limpid pale straw in colour with golden glints. Aromas of tropical fruits and grapefruit greet the nose, with subtle floral, herb and spice notes. The palate is beautifully fresh and focused, offering myriad soft white fruit and citrus flavours and again a hint of peppery spice and garrigue herbs. There's a hint of oiliness on the mid palate, though the texture is pretty much bone-dry, with ample acidity and a long, refreshing, zesty, minty finish. Great as an aperitif - especially if served with crudités or olive tapenade - or with plain grilled or baked fish dishes. |
